My family inherited my mother's tradition of making an Easter Bunny cake. We take two round cakes (using one for the face and the other cut up as ears and a bowtie) and cover with white frosting, coconut, jellybeans, and sometimes toothpicks for whiskers to make the bunny. No two cakes ever turn out the same, and that's half the fun.

Now THAT brings back memories!!

We always made bunny cakes when we were kids, too. We used black licorice strands to make the whiskers. And it seems like we colored the coconut for the tie, too. We also always made cupcakes topped with green coconut for "grass", topped with mini jelly beans.

Makes me want to go bake a cake! :-)
